Goat Cheese and Dill Egg Dish
This easy and elegant egg dish could not be simpler to put together, bake, and serve. The bright and fresh flavor from the dill is a perfect pairing to accompany the creaminess of the goat cheese.

- 1 cup salsa
- 12 eggs
- 1/2 cup heavy cream
- 1/2 tsp salt
- 2 Tbsp fresh dill, chopped or 1/2 tsp dried dill
- 4oz goat cheese crumbled
- 8oz cheddar cheese grated
Start by pouring the salsa into the bottom of your dish. I never measure this part and it doesn't need to be exact. Just pour enough salsa to cover the bottom of you pan, making it more or less to taste.
Next, crack your eggs straight onto the surface of your salsa.
Then take your heavy cream and pour it about 2 tablespoons at time (again, I never measure this and it turns out great every time.), evenly across the entire surface of the eggs so it looks like you have little pools of cream throughout the entire dish.
Top it all with salt and pepper.
Now dollop in your goat cheese one tablespoon at time, making sure to distribute it evenly across the entire dish.
Then sprinkle on your fresh or dried dill and top with 1-2 cups of grated cheese.
Finally, top the whole thing with a little bit more fresh dill to give a little hint at flavors that will be found inside.
Bake at 400 for 35 -45 minutes.
