This easy and elegant goat cheese and dill egg dish is effortless to assemble and is ready to bake in less than 10 minutes! I love it for its simplicity and it’s a huge bonus that the presentation is so beautiful despite how easy it is to make.
In fact, the ingredients can be so in-exact that having the elements of this recipe memorized is all you need to throw this together on the fly! I have often made this dish from memory with a little bit of all the different cheeses I happen to have in my fridge and just enough salsa to cover the bottom of the dish.
Why I Love This Goat Cheese and Dill Egg Dish
Goat cheese and dill are such a classic culinary combination. Both have a bright and fresh flavor that compliment each other so well. I have also been a long time fan of goat and salsa as a delicious flavor pairing and they work together beautifully in this recipe. I love the creamy tang that the goat cheese adds to the savory flavor of the salsa.
You can make this dish for breakfast or brunch, but I most often make it as an easy, last minute dinner. I typically have all these ingredients on hand in the refrigerator and the pantry. I can throw it together is just a few minutes and then clean up the kitchen and make some sides while it bakes. It pairs beautifully with a salad, whole roasted sweet potatoes, steamed frozen veggies, sourdough bread or from scratch biscuits.
Tips:
- Once you are familiar with the ingredients that make up this recipe, you can easily assemble it without any measuring! I never measure and it turns out great every time.
- Try making different variations of the recipe. Switch out the type of herb or cheese for all kinds of flavors!
- Grate your own block of cheese for the smoothest, creamiest texture. Pre-grated cheese from the grocery store is coated in a starch to prevent it from sticking together. Unfortunately, that starch also prevents the cheese from spreading smoothly and inhibits creaminess.
- This egg dish bakes at the same temperature needed to roast whole sweet potatoes. Poke some holes in the potatoes with a fork, and set them straight on the rack of your oven along side your egg dish for an easy side!
- Use a mineral salt, as opposed to iodized table salt, and it will greatly boost the nutritional value of the dish. Most Americans are mineral deficient and swapping out regular table salt for mineral salt can help restore vital minerals to your body. I buy pink himalayan sea salt in 10 pound bags and it lasts me up to 6 months!

How To Make My Goat Cheese and Dill Egg Dish
Start by pouring the salsa into the bottom of your dish. I never measure this part and it doesn’t need to be exact. Just pour enough salsa to cover the bottom of you pan fi that’s all you have on hand.
Next, crack your eggs straight onto the surface of your salsa.
Then take your heavy cream and pour it about 2 tablespoons at time (again, I never measure this and it turns out great every time.), evenly across the entire surface of the eggs so it looks like you have little pools of cream throughout the entire dish.
Top it all with the salt and pepper to taste. I use high mineral pink himalayan sea salt to boost the nutritional value of the dish.
Now dollop in your goat cheese in 1-2 tablespoon chunks at time, making sure to distribute it evenly across the entire dish.
Then sprinkle on your fresh or dried dill and top with grated cheese.
Finally, top the whole thing with a little bit more dill to give a little hint at flavors that will be found inside!
Bake at 400 for 35 -45 minutes.
